This is a simple, but absolutely delicious roast! It’s a family favourite and a great alternative to your regular gravy roast.
Serves: 6-8
Ingredients:
- 1kg Beef roast
- 1 Teaspoon salt
- 1/2 Teaspoon pepper
- 1 Cup jellied cranberry sauce
- 1/2 Cup orange juice
- 1/4 Cup packed brown sugar
Method:
1. Combine salt and pepper; rub over the roast.
2. Place roast, fat side up, on a rack in a greased roasting pan.
3. Bake, uncovered, at 300° for 50 minutes.
4. Meanwhile, combine the cranberry sauce, orange juice and brown sugar in a saucepan; cook over medium heat until cranberry sauce is melted. Drizzle a quarter of the glaze over roast.
5. Bake 20 minutes longer or until a thermometer reads 145°, basting frequently with remaining glaze.
6. Let stand for 10 minutes before slicing.
Serving Suggestion:
- Warm remaining glaze and serve it with the roast.
- Fresh steamed vegetables.
You’ll notice our picture is of a rolled roast, so if that’s what you’re making you may have to reduce the cooking time a little.
Feel free to put some finely chopped onion in the centre!
